PUMPKIN CHIP MUFFINS
4 eggs
2cups sugar
116 oz can pumpkin
1cup oil
3cups flour
2tsp baking soda
2tsp baking powder
1tsp cinnamon
1tsp salt
2cups chocolate chips
Beat eggs, sugar, pumpkin, and oil until smooth. Combine dry ingredients and add mixing well. Fold in chocolate chips. Fill muffin cups 3/4 full.

Heat oven to 400 degrees. Bake 16 to 20 minutes. Cool 10 minutes in pan before removing to wire rack.

Yield: approximately 24 standard muffins.
